- 1.5 pound bag of mini baby potatoes
- 3 Tablespoons butter, melted
- 2 Tablespoons avocado or olive oil

- ½ cup freshly grated parmesan cheese
Instructions
- Preheat the oven to 425 degrees.
- Fill a large pot halfway full with water. Place the pot on the stovetop and turn the burner to medium-high heat.
