Ingredients
The Cinnamon and Honey Shortbread Crust
- 1 Cup + 2 Tablespoons flour
- 1 stick butter, melted
- ¼ cup brown sugar
- ¼ cup cane sugar
- 1 teaspoon cinnamon
- 1 teaspoon honey
- ¼ teaspoon salt
The Key Lime Topping
- 2 14oz-cans sweetened condensed milk
- ½ cup sour cream
- ½ cup lime juice
For Serving
- whipped cream
Instructions
- Preheat the oven to 325 degrees and line an 8x8 baking dish with parchment paper.
- In a medium size bowl, mix the crust ingredients together - 1 cup and 2 TBS flour, 1 stick melted butter, ¼ cup cane sugar, ¼ cup brown sugar, 1 teaspoon honey, 1 teaspoon cinnamon and ¼ teaspoon salt.
- Transfer the crust mixture to the 8x8 pan and spread out the crust mixture evenly to cover the bottom of the pan. Use your hands to press the crust into the bottom of the pan.
- Use a fork to poke holes throughout the crust.
- Place the baking pan in the oven and bake for 25 minutes or until the crust is slightly browned.
- Remove the pan from the oven and allow the crust to cool for 5 minutes.
- Increase the oven temperature to 375 degrees.
- While the crust cools, make the key lime topping.
- Add ½ cup lime juice, 2-14 ounce cans of sweetened condensed milk and ½ cup sour cream to a medium-size bowl and use a whisk to combine.
- Pour the key lime topping on top of the crust and spread it out evenly.
- Place the baking pan in the oven and bake for 10 minutes at 375 degrees.
- The top of the key lime topping will form small little bubbles and the inside will not jiggle when it is done baking.
- Remove the pan from the oven allow to cool for 10 minutes on the countertop. After 10 minutes, transfer the pan to the fridge to cool completely.
- When ready to serve, cut into 16 bars and top with whipped cream to serve and enjoy.
