How to Make French Silk Pie
Step 1. Add Oreos to food processor and process into crumbles.
Step 2. Add melted butter to the crumbles and mix together.
Step 3. Transfer the crumbles to a pie plate and bake the crust.
Step 4. Add eggs and sugar to a small pot on burner on low to medium heat.
Step 5. Whisk continually for 7 minutes and until frothy.
Step 6. Add chocolate and vanilla extract.
Step 7. Mix until combined then chill in the fridge.
Step 8. Add creamed butter to the chocolate mixture and mix together.
Step 9. Add whipped cream to the butter and chocolate mixture.
Step 10. Fold the whipped cream into the chocolate mixture to create a mousse.
Step 11. Pour the chocolate mousse over the Oreo crust and chill in the fridge.
Step 12. After chilling, top the mousse with whipped cream and chill.
Step 13. Garnish the pie with chocolate curls.
Step 14. Cut the pie into slices and serve.

This pie recipe is not actually French, but gets it name from it's silky smooth texture.
The traditional way of making French Silk Pie does call for the use of raw eggs, but our recipe does not use raw eggs. The eggs in this dessert are boiled with sugar on the stovetop until frothy and to a temperature of about 160 degrees Fahrenheit.

Ingredients
The Crust
- 1 box of chocolate sandwich cookies (about 28 cookies)
- 3 Tablespoons melted butter
The Chocolate Mousse
- ⅔ cup cane sugar
- 3 large eggs
- 1 cup chocolate chips
- 1 teaspoon vanilla extract
- 8 Tablespoons butter, at room temperature
- 1 cup whipped cream
The Whipped Topping
- 2 cups whipped cream
Chocolate Curls
- 1 chocolate bar
Instructions
- Preheat the oven to 350 degrees and grease a pie plate.
- Add one box of chocolate cream sandwich cookies (about 28 cookies) to a food processor and process until finely ground.
- Pour 3 Tablespoons melted butter to the bowl of the food processor and stir the butter into the cookie crumbs to combine.
- Pour the cookie crumbs into the bottom of the pie plate and use a spatula or your hands to press the cookie crumbs into the bottom and up the sides of the pie plate.
- Once the crust has been shaped, place the pie plate in the oven and bake the cookie crust for 8-10 minutes or until fragrant at 350 degrees.
- When the crust is done, remove it from the oven and allow the crust to cool completely.
- Begin making the mousse filling by adding 3 eggs and ⅔ cup cane sugar to a sauce pan. Place the pan on the stovetop on low heat and whisk continuously until the mixture reaches 160 degrees. (About 5-7 minutes)
- Remove the saucepan from the heat and add the chocolate and vanilla extract to the saucepan. Use a spatula to stir everything together until the chocolate melts.
- Pour the chocolate mixture into a glass bowl and place the bowl in the fridge to chill for 30 minutes to an hour.
- In a separate, small bowl add 8 Tablespoons butter at room temperature and use a hand mixer to cream the butter.
- Remove the cooled chocolate mixture from the fridge and add the creamed butter to the bowl with the chocolate.
- Use the hand mixer to cream the butter and chocolate together.
- Add 1 cup whipped cream to the bowl and use a spatula to fold the cream into the chocolate. You will know they are combined completely when there are no white streaks and the mixture is a light brown color.
- Pour the chocolate mousse into the cooled pie crust and set in the fridge to chill for at least 4 hours and up to overnight. The longer the pie chills, the better the chocolate mousse will set up.
- After chilling for 4 hours or overnight, add 2 cups whipped cream on top of the pie.
- Place the pie back in the fridge to chill for 30 minutes to an hour to allow the whipped cream to set.
- When ready to serve garnish with chocolate curls or shavings, cut into 8-10 pieces and enjoy.
