How to Make Gluten-Free Dinner Rolls
Step 1. Combine the warm milk, honey and yeast together in a small bowl. Allow the yeast to proof.
Step 2. In a separate bowl combine the eggs, apple cider vinegar, and melted butter.
Step 3. Add the gluten-free flours, baking powder, xanthan gum and salt to the bowl of the stand mixer and whisk together.
Step 4. Pour the egg mixture into the bowl of the stand mixer with the flour.
Step 5. Pour the proofed yeast mixture into the bowl of the stand mixer.

Ingredients
- 1 cup brown rice flour
- 1 cup white rice flour
- 1 cup tapioca flour
- 1 teaspoon xanthan gum
- 1 teaspoon salt
- 2 teaspoons baking powder
- 2 eggs
- 1 teaspoon apple cider vinegar
- 3 Tablespoons butter
- 1 cup warm milk
- 3 Tablespoon honey
- 2.5 teaspoons yeast
Instructions
- Begin by proofing the yeast. Warm the milk until it is bath-water temperature (about 30 seconds in the microwave oven). Add the yeast and honey to the bowl of warm milk and stir to combine. Set the bowl aside and allow to proof for 10 minutes.
- In the bowl of a stand mixer, combine the brown rice flour, white rice flour, tapioca starch, xanthan gum, baking powder and salt. Use a whisk to combine.
- In a separate small bowl, combine the eggs, melted butter, and apple cider vinegar.
- Pour the egg mixture into the bowl of the stand mixer.
- Once the yeast has proofed, pour the yeast into the bowl of the stand mixer.
- Use the dough hook attachment to mix everything together on medium for 2 minutes.
- Use a silicone spatula to scrap the sides of the bowl.
- Turn the mixer to medium speed and allow it to beat the dough for 8 minutes.
- While the dough is mixing, spray a square baking dish with nonstick cooking spray or grease it with butter.
- After 8 minutes of mixing, use a large spoon or ice cream scooper to scoop the dough out of the stand mixer bowl into the square pan making rows of three for 9 total rolls. It is okay if they are touching in the dish.
- Cover the pan with the rolls in it with plastic wrap and allow the rolls to rise for 1-2 hours or until they have rise enough that their tops are almost higher than the sides of the baking pan.
- While the rolls rise, preheat your oven to 375 degrees.
- Once the rolls have risen, remove the plastic wrap and place the pan in a preheated oven to bake for 15 minutes at 375 degrees.
- After 15 minutes, briefly remove the pan from the oven to loosely cover it with tin foil. Do not seal the edges around the pan, simply loosely place the foil on the pan.
- Place the pan back in the oven and bake for 15 additional minutes.
- Remove the finished rolls from the oven and brush with butter.
- Serve the rolls warm or allow to cool and serve at room temperature.
