Recipe FAQ
Butter is the key ingredient that makes brownies fudgy. Fudgy brownies have a higher fat to flour ratio than cakey brownies. The butter combined with the chocolate, sugar and eggs in this recipe give these homemade brownies an extremely fudgy chocolate middle with a crackle crust on top.
The crinkle top on these fudgy brownies comes from the eggs and sugar being mixed together for 3 minutes with a hand mixer. This allows bonds to form between the two ingredients that help create the beautiful crinkle on the top of the brownies.
We recommend baking brownies in a reflective metal baking pan like a lightweight aluminum pan. A metal pan conducts heat quickly and evenly. Glass and ceramic pans take longer to warm up and can cause the brownies to have a gummy texture. They also retain heat longer than metal pans which can actually overbake the brownies.
