How to Make the Gluten-Free French Silk Pie Bars
Step 1. Add gluten-free Oreos to the bowl of a food processor and process into crumbles.
Step 2. Pour the melted butter into the bowl and mix together with the crumbles.
Step 3. Transfer the mixture to a baking dish and bake the crust.
Step 4. Add eggs and sugar to a small pot on burner on low to medium heat.
Step 5. Whisk continually for 7 minutes and until frothy.
Step 6. Add chocolate and vanilla extract.
Step 7. Mix until combined.
Step 8. Add creamed butter to the chocolate mixture and mix together.
Step 9. Add whipped cream to the butter and chocolate mixture.
Step 10. Fold the whipped cream into the chocolate mixture to create a mousse.
Step 11. Pour the chocolate mousse over the Oreo crust and chill in the fridge.

The traditional way of making French Silk Pie does call for the use of raw eggs, but our recipe does not use raw eggs. The eggs in this dessert are boiled with sugar on the stovetop until frothy and to a temperature of about 160 degrees Fahrenheit.

Ingredients
Cookie Crust
- 1 box of gluten-free Oreos (about 28 cookies)
- 3 Tablespoons melted butter
Chocolate Mousse
- ⅔ cup cane sugar
- 3 large eggs
- 1 cup chocolate chips or 1 chocolate bar
- 1 teaspoon vanilla extract
- 8 Tablespoons butter, at room temperature
- 1 cup whipped cream
For Serving
- Whipped cream
Instructions
- Preheat the oven to 350 degrees and grease an 8x8 baking dish.
- Add one box of gluten-free Oreos (about 28 cookies) to a food processor and process until finely ground.
- Pour 3 Tablespoons melted butter to the bowl of the food processor and stir the butter into the cookie crumbs to combine.
- Pour the cookie crumbs into the bottom of the baking dish and use a spatula or your hands to press the cookie crumbs into the bottom and up the sides of the dish.
- Once the crust has been shaped, place the baking dish in the oven and bake the cookie crust for 8-10 minutes or until fragrant at 350 degrees.
- When the crust is done, remove it from the oven and allow the crust to cool completely.
- Begin making the mousse filling by adding 3 eggs and ⅔ cup cane sugar to a sauce pan. Place the pan on the stovetop on low heat and whisk continuously until the mixture reaches 160 degrees. (About 7 minutes)
- Remove the saucepan from the heat and add the chocolate and vanilla extract to the saucepan. Use a spatula to stir everything together until the chocolate melts.
- Pour the chocolate mixture into a glass bowl and place the bowl in the fridge to chill for 5 minutes.
- In a separate, small bowl add 8 Tablespoons butter at room temperature and use a hand mixer to cream the butter.
- Remove the cooled chocolate mixture from the fridge and add the creamed butter to the bowl with the chocolate.
- Use the hand mixer to cream the butter and chocolate together.
- Add the whipped cream to the chocolate mixture and use a spatula to fold the cream into the chocolate. You will know they are combined completely when there are no white streaks and the mixture is a light brown color.
- Pour the chocolate mousse into the cooled pie crust and set the baking pan in the fridge to chill for at least 4 hours and up to overnight. The longer the it chills, the better the chocolate mousse will set up.
- After chilling for 4 hours or overnight, cut the the dish into 16 pie bars and serve with whipped cream on top.
