Ingredients
- 2- 15 oz cans black beans, drained and rinsed
- 1 cup or 3 ears cooked corn
- 2 red bell pepper, finely diced
- 2 cloves of garlic, minced
- ¼ cup red onion, finely diced
- 1 jalapeno, diced
- ½ cup cilantro
- 2 avocados, diced
- 6 Tablespoons lime juice
- 1 teaspoons salt
- 2 Tablespoons honey
- 9 Tablespoons olive oil
Instructions
- Chop and dice all of the vegetables.
- Drain and rinse the black beans.
- Add the beans and vegetables to a bowl and mix together. Do not mix the avocado in.
- Pour in the cayenne, honey, oil, lime juice, and salt.
- Mix everything together to combine.
- Chill in the fridge for 30 minutes to overnight.
- Add the diced avocados to the dish before serving.
- Serve with chips.
