Cinnamon Twist Loaf

Ingredients
Dough
- 1 cup warm milk
- 2.25 teaspoons (1 package) yeast
- ¼ cup sugar
- 4 Tablespoons butter, melted
- 1 egg
- 3 + ¼ cups unbleached flour
- 1 teaspoon salt
Filling
- 1 cup brown sugar
- 4 Tablespoons melted butter
- 1 Tablespoon cinnamon
Icing
- 2 cups powdered sugar
- 4 Tablespoons milk
Instructions
- Add warm milk, yeast and sugar to a small bowl. Fold the yeast into the milk, cover and allow to proof for 10 minutes.
- Add 3 cups of flour to a large mixing bowl with the salt. Whisk to combine.
- Pour the proofed yeast mixture into the large mixing bowl.
- Pour the melted butter and egg into the bowl.
- Use a dough hook to mix the ingredients together.
- Add the remaining ¼ cup flour and mix together until the dough easily pulls away from the sides of the bowl.
- Use your hands to knead the dough for 5 minutes into a smooth ball.
- Place the ball of dough in the bowl and cover to allow the dough to rise for 30 minutes.
- Make the filling in a small bowl by adding the butter and melting it in the microwave.
- Add the brown sugar and cinnamon to the bowl and stir to combine. Set aside the bowl aside.
- Once the dough has risen or doubled in size, transfer it to a floured work surface.
- Use a rolling pin to roll the dough out into a large rectangle.
- Spread the filling over the dough.
- Roll the down up lengthwise.
- Use a bench scraper to cut the rolled dough in half leaving ¼ inch attached at one end.
- With the cut-side facing upward, twist or braid the two pieces of dough. Tuck the ends of the braided dough together.
- Transfer the twist loaf to a sheet pan lined with parchment paper.
- Cover the loaf and allow the dough to rise for an additional 30 minutes.
- Preheat the oven to 375 degrees.
- After allowing the loaf to rise, transfer the sheet pan to the oven and bake for 15-18 minutes or until the loaf is slightly golden brown.
- Remove the pan from the oven and allow the loaf to cool before topping it with icing.
- Make the icing by adding the powdered sugar and milk to a bowl and whisking to form a smooth icing.
- Pour over the cooled loaf then cut into slices to serve.
