Ingredients
- 1lb breakfast sausage
- 1 cup bell peppers, diced
- 10 eggs
- 1 cup milk
- ½ cup sour cream
- ¼ teaspoon salt
- ½ teaspoon pepper
- 2 cups cheddar cheese
- 1 lb potatoes (shredded hash browns, diced potatoes, or tater tots)
Instructions
- Preheat the oven to 350 degrees.
- Add the breakfast sausage and bell pepper to a cast iron skillet and cook to brown the meat. Once the meat is brown, remove from the heat and set aside.
- In a large mixing, whisk together 10 eggs, milk, and sour cream.
- Add the sausage and peppers, 1 cup of cheese, salt and pepper to the mixing bowl and stir to combine.
- Pour the potatoes into the bottom of the casserole dish to cover the bottom of the dish.
- Pour the egg mixture over the potatoes.
- Sprinkle the remaining cheese over the dish.
- Place the casserole dish in the oven and bake for 45-50 minutes or until the middle doesn't jiggle.
- Remove the dish from the oven and allow to cool for 5-10 minutes before serving.
