Ingredients
- 2 chicken breasts
- 2 cups corn
- ¼ cup finely diced jalapeno
- 1 15 oz can black beans, drained and rinsed
- 1 15oz can diced tomatoes
- 1 cup chicken broth
- 1 8oz block cream cheese, cubed
- 1 Tablespoon minced garlic
- 1 teaspoon onion powder
- ½ Tablespoon cumin
- ½ teaspoon red pepper flakes
- 1 teaspoon salt
Instructions
- Place the chicken breasts in the bottom of the crockpot.
- Pour the corn, tomatoes, beans, jalapeno, spices, and broth over the chicken in the crockpot.
- Use a spoon to stir the ingredients to mix them but leave the chicken on the bottom of the crockpot.
- Cut an 8oz block of cream cheese into 8 cubes and place the cubes in the crockpot on top of the chili ingredients.
- Place the crockpot lid on the crockpot and program the crockpot to cook on high for 4 hours.
- After 4 hours, check the chicken to make sure it is cooked through.
- Remove the cooked chicken from the crockpot and shred the chicken.
- Return the chicken to the pot and use a spoon to stir and mix the ingredients together to form a creamy chili.
- Turn the crockpot to the "keep warm" setting and allow to set for 10 minutes before serving.
