Ingredients
- 2 chicken breasts, thinly sliced
- 3 bell peppers, sliced
- 1 red onion, sliced
- 1 Tablespoon olive oil

Fajita Sauce
- ⅓ cup orange juice
- ¼ cup lime juice
- 2 teaspoons coconut aminos
- 1 Tablespoon honey
- 1 Tablespoon minced garlic
- 2 teaspoons paprika
- 2 teaspoons cumin
- 1 Tablespoon chili powder
- 1 teaspoon oregano
- ½ teaspoon salt
- 1 Tablespoon arrowroot starch
Instructions
- Start by slicing the peppers, onions and chicken into thin slices.
- Place a skillet on stovetop and turn the burner to medium.
- Add 1 Tablespoon olive oil to the skillet with the sliced vegetables.
- Toss the vegetables in the oil and cook until softened. (about 7-10 minutes)
- When the vegetables are soft, remove them from the skillet and place aside in a bowl.
- Add the sliced chicken to the hot skillet.
- Cook the chicken for 5-7 minutes or until it is cooked all the way through.
- While the chicken cooks, add the fajita sauce ingredients to a small bowl and use a whisk to mix everything together.
- When the chicken is cooked all the way through, turn the burner to low.
- Pour the fajita sauce over the chicken and use a spatula to toss the chicken and coat it in the sauce.
- Simmer the chicken in the sauce on low for 3-5 minutes, then add the peppers and onion back into the skillet.
- Use a spatula to mix everything together and coat the vegetables in the fajita sauce.
