- Ground Beef - You can use ground beef in this recipe or substitute with ground venison or turkey meat.

Step 1. Brown the beef and add taco seasoning.

Ingredients
- 1 pound ground beef
- 1 package (3 TBS) taco seasoning
- 4 ounces cream cheese
- ¼ cup red onion, finely diced
- 1-16oz can black beans
- ½ cup corn
- 4 cups shredded cheddar cheese
- 8 burrito-size tortillas
- sour cream, cilantro and avocado for serving
Instructions
- Preheat the oven to 375 degrees.
- Add the beef to the cast iron skillet on medium heat and brown the beef.
- Once the beef is browned, add taco seasoning to the skillet with ⅓ cup water. Stir to combine.
- Add the cream cheese to the skillet and stir to melt and combine with the beef.
- Pour the red onion, beans and corn into the skillet.
- Stir to combine.
- Allow the mixture to cook on low heat for 3-5 minutes.
- Arrange 6 tortillas around the perimeter of the sheet pan so half of each tortilla is hanging over the edge. Place one tortilla in the center of the sheet pan so the bottom of the pan is covered.
- Sprinkle half of the cheese on top of the tortillas.
- Spread the meat mixture evenly over the cheese.
- Sprinkle the remaining cheese on top of the meat.
- Place a tortilla in the center of the pan, then fold the side tortillas up to enclose the filling.
- Brush the top tortillas with oil or butter.
- Place a sheet pan on top of the quesadilla to hold the tortillas down while baking.
- Transfer the sheet pan quesadilla into the oven and bake for 15 minutes covered with the second sheet pan.
- Remove the top sheet pan and bake for an additional 7-10 minutes until golden and crispy on top.
- Remove the sheet pan from the oven and allow the quesadilla to cool for 3-5 minutes.
- Use a pizza cutter to cut the quesadilla into 15 pieces.
- Serve with sour cream, avocado, cilantro or any of your favorite toppings.
